On June 10, Kanazawa University held a press conference at a hotel in Kanazawa City to unveil its original sake, Kokorozashi (志), developed in collaboration with the Naohiko Noguchi Sake Institute (Komatsu City, Ishikawa Prefecture) and the university’s students.
This original sake was developed in collaboration with the Naohiko Noguchi Sake Institute, primarily by student project members who participated in program organized by the Frontier Science and Social Co-creation Initiative as part of Project: AERU(※1). These included the university–community exchange initiative “ZATSUDAN NO CHIKARA (The Power of Casual Conversation)”(※2), a sake brewery tour at the Institute, and hands-on experience planting organic sake rice.???
At the press conference, under the moderation of Professor Takayuki Shinoda, Special Advisor to the University President for Regional Co-Creation, representatives from both the Naohiko Noguchi Sake Institute and Kanazawa University introduced the project and the completed sake. Master brewer Naohiko Noguchi shared his joy about the collaboration, saying, “I'm truly delighted that young people are taking an interest in sake and learning the art of brewing.” Professor Akifumi Seto, Special Advisor to the President for Public Relations and Branding, also announced that “this project will continue as an initiative dedicated to pursuing sustainability.”
After the press conference, a reception was held in a separate room where attendees had the opportunity to sample the original sake. Alongside the student project members, researchers and students involved in ongoing research collaborations joined master brewer Naohiko Noguchi for informal conversations, exchanging ideas on future developments.
