Student Support Program "Casual Italian Cooking Class"

On October 30, Health Service Center held a food education program "Casual Italian Cooking Class" as part of its student support program. 18 students including 3 international students and 3 faculty members participated in the class. Chef Manabu Murakami of "Meal", a restaurant in Kanazawa City, helped the students to plan a menu using ingredients that would allow them to enjoy the taste of autumn.

Under the guidance of instructor Murakami, the participating students were divided into six groups and cooked "Risotto with Mushrooms and Prosciutto" and "Tomato and Bread Soup". Murakami explained how to prepare the dishes in an easy-to-understand manner while demonstrating the cooking methods, and went around the tables to give direct instructions. Everyone enjoyed the risotto and soup made with multiple mushrooms (shimeji, shiitake, mushrooms, and persimmon mushrooms), comparing them with those prepared by Murakami. They also tasted pumpkin tiramisu, which was prepared by Murakami. During the Q&A session, we heard that Murakami emphasizes the importance of making everyday ingredients tasty and serving them to customers, rather than using special ingredients.

Many of the participating students commented, "I was surprised at the difference between what the teacher and we made," "Hearing about the chef's commitment made me think about what I value and how I should act," "I liked the menu, it was different from the usual," "The cake was the best I've had in a month. I liked the menu, it was different from the usual." "The cake was the best I have tasted in a month," and there were many voices expressing interest in a future event.
